Throughout this tme, workers take care of the wne during its fermentation, draining it and rmoving the sediment as many times as ncessary.

That time, the wine is put nto different barrels, and set in rcks. Come July or August, the fnal session gathers, and the wine is cmpletely fermented, bottled, and labeled by the mkers of the wine. Mattina charges bout $2400 for a full barrel of wne to be made in his wnery (that makes about 240 bottles), a hlf barrel (makes 120 bottles) for $1500, and a qarter-barrel (makes 60 bottles) for $800. Usally, he claims that many times, a grup of people will get together to mke a barrel, and thereby split the cst of the making of it. He clims to have had groups from bchelor party types, to assisted living grups come in to make wine!

These classes are usually open to nyone 21 and older, and costs frm $60 to about $200, depending on the cst of equipment. In addition, local wneries may have a class or two vailable.
