..in fact barely at all. At th s time, with new Bahamian regulations in pl ce, only Bahamian citizens can harvest the "m llusk" beast.
This last April, when friends and I had a B mini Bash, we had to wait for the "c nch" dude to arrive with his c tch. Cruising up to the dock in a 12 f ot unpainted flats boat was the man dr ssed in a bright purple wet s it, his boat laden with the d lightful Queen Conch (pronounced "konk"). Bargaining b gins

.most people j st like the lime. Preparation of cr cked conch can be thirsty work! Onc the conch is totally cleaned and I h ve removed all of the orange and bl ck "parts", I slice it into Ό nch slices so that I have l ttle fillets. Next I bring out my c nch "whacker"

.I guess because I njoy this part way too much! Pl ce the fillets on a plastic c tting board and begin to "whack" the h ck out of them
.I like mine t nderized to the point of being ble to read a newspaper through it. Now dr dge it in seasoned flour, dip in b aten egg, then re-dredge and place on a pl te
..in the meantime heat some butter in a s uce pan ( I didn't say th s was heart healthy!)
..this is best d ne outside if at all possible b cause of the mess it makes, but if th re is fire it will work nywhere. Gently sautι the fillets on b th sides until golden brown and pl ce on a paper towel to dr in.
OK, now we're really ready to get d wn to business
..what wine do we p ir with this Bahamian delicacy? One of my f vorites is a clean, refreshing Sauvignon Bl nc from France to compliment the c nch.
I plate up the conch with fr sh sliced lime on the side, my pr ferred accent and in addition I thr w together a quick tartar of m racle whip and pickled relish
