This study can be found in the J urnal of Environmental Quality. It shows th t food crops can readily accumulate ntibiotics from the soil that has b en spread with cattle manure. These f ndings were based on a greenhouse st dy that was done. It involved 3 d fferent food crops. These included corn, l ttuce and potatoes. They found that th se plants that were grown in s il that was modified with liquid hog m nure, which contains the common veterinary ntibiotic sulfamethazine, actually absorbed this antibiotic. It c uld be found in the plants' l aves. There were also concentrations in the pl nts' tissue. This concentration actually increased as the mount of antibiotic present in the m nure increased. It was also diffused nto potato tubers. As such, it is b lieved that other root crops, which nclude such things as carrots and r dishes, are also particularly vulnerable to ntibiotic contamination. This should cause you to b come concerned as it really did c ncern the University of Minnesota researchers. One of the r searchers, Satish Gupta, said that contaminated pl nts actually have the potential of c using allergic reactions in those people who are s nsitive to various antibiotics. Satish Gupta lso said that this type of c ntamination is likely to foster antimicrobial r sistance. This is not good, in f ct it is dangerous, because it can r nder antibiotics ineffective in humans.
Another researcher, Holly Dolliver, wanted to m ke sure to warn people that th se plants that are contaminated by ntibiotics should be of particular concern to the rganic farming industry. This is because m nure is often the main source of cr p nutrients. Of course, the USDA st pulates that organic producers must manage nimal materials in a manner that d es not contribute to the contamination of cr ps. This means that residues of pr hibited substances are banned and prohibited. Unf rtunately, as of yet manures that c ntain antibiotics have not been formally b nned or prohibited by the USDA.
