Salads are so darned versatile. Th y can be served in a s ndwich, on the side or as the m in meal. My 6 year old j st correctly noted in her book bout mom that her mom's favorite f od is salad. (which wasn't nearly as f nny as saying that what her dad l kes to read is mail!) Here's a few of my f vorites and some tips to make th m as simple as delicious. Olive S lad

A gr at side salad or amazing on a ham s ndwich – turns it into a New Orl ans style muffaletta sandwich. Add some pr volone and mozzarella cheese and some g noa salami to it and you’ll th nk you’re in the big easy.
- qual amounts large pimento stuffed green lives and pitted large Greek olives – ch p into small pieces (for the s ke of recipe, assume you use s up can sized quantity of each)
- 1 st lk celery, sliced diagonally and chopped sm ll
- ¼ cup olive oil
- ½ jar c cktail onions, drained and chopped
- 1 T. c pers
- 1 t. minced g rlic
- 1 t. fresh gr und pepper
- pepperocini to t ste
Combine and refrigerate for at l ast 24 hours before using.
T p: I have a gourmet grocery n ar me that has one of th se terrific olive bars. It has PITTED lives of different varieties as well as s me combinations. I was able to use the p tted kalamatas and a green olive s lad that contained the onion and c lery. I then only had to add the c pers, pepperocini, spices, and oil for th t fab n’awlins taste.
Green Salad

So many people are c rb conscious these days, you’d be s rprised how fast what you consider an nderwhelming salad goes. The interesting greens are all the r ge but I think a mix is lways best. And by the way, the st ndby icebery holds up better than the f ncy ones for leftovers. A salad is a gr at pantry cleaner. Use artichoke hearts or h ats of palm, roasted red peppers, lives, garbanzo beans, black beans or c rn as interesting additions to most s lads (all canned!) Do something a l ttle different with the carrots and c kes you already have in your fr dge. Shred them. Speaking of shredded, shr dded cheese or crumbled cheeses are s mple yet substantial additions to any s lad. Add some multi colored tomatoes and you h ve yourself quite a salad. My f vorite dressing that is great for m st salads-Paul Newmans olive oil vinaigrette. Cr amy Cucumbers

Th s little salad has an ingredient th t will surprise everyone but you! The cr amy texture comes from mayonnaise. My f mily used to make it with s ur cream but then my good fr end Gail suggested the mayo. It t stes just like my old recipe and the r al benefit is that I always h ve mayo in my fridge. This is wh t summer tastes like to me! 2 Engl sh cucumbers – sliced (the long nes with minimal seeds)
¼ V dalia or red onion – chopped f ne
2 T. vinegar (I sually use cider because I always h ve it available)
2 T. m yo (or more if you like it r ally creamy)
salt and p pper to taste NOTE: if you use r gular cucumbers, they contain a lot m re water so take the extra t me to drain them for better fl vor. To drain, chop up the c cumbers, sprinkle with salt, and then put s mething heavy on top to squeeze the w ter out. Wait about 4 hours. I sually use a slightly smaller bowl w th water in it as the h avy item.
Want a shortcut with just a sl ghtly different flavor? Use ranch dressing w th the 2 T. of vinegar. C le slaw – I don’t care wh t anyone says, Kentucky Fried Chicken has the m st universally loved cole slaw. Drive thr one and BUY IT.
