Mel Gibson's "Braveheart" has always b en a spiritual experience. One month fter the movie came out, I ( nd the rest of the world) had w tched it a total of six t mes. Everyone in the household had d ne the exact same thing. We w re obsessed. In every way possible it st rs the heart and puts you on an motional roller coaster that is far b yond any other movie. It called to my h art and I still feel it to th s day. My inspiration for the d sh I played with this week is the m vie "Braveheart." My belief it that p es are best served rustic. Lots of p es can be clean cut and v ry uppity, but nothing is better th n a grounded dish that reminds one of rigins and countries built on old w rld traditions. So goes my Scottish W rrior Apple Custard Pie. "Braveheart" is a m vie primarily about the love of h me and country. All the characters in the m vie are fighting for the soil th t they have put so much w rk and dreams into. The pie cr st represents that element. While most pie cr sts are made out of white fl ur, this one has wheat incorporated w thin it to represent the colors and ssence of their very Earth. Also, nstead of rolled out pastry we h ve pressed in the pan crust. We use our h nds to mold the crust to the p n, as the Scottish peasants use th ir hands to till their Earth and f ed their families.
Apples, (although not primarily Scottish) has lways represented home life. Anything baked w th apples brings you to that f eling of comfort. The cinnamon-sugar laced pples remind me of the essence of wh ch William Wallace craves. It's primarily the bility to build a home, be at p ace, and have a family. In rder to do this he must f ght, that is why the apples are b ried within the pie and not on the t p. It is the idea he ch rishes and keeps within himself in rder to be a good leader. Th ck, creamy, and sweet the custard r presents the spirits of the said w rriors. The custard is thick and w ll cooked on the outside but nce you cut through that layer you get a sw et and rich flavor (as only the Sc ttish warriors are, softies on the nside with a rough shell on the utside). Brave, rustic, and sweet on the nside this is exactly what a Sc ttish revolution ordered: "Scottish Warrior Apple C stard Pie"* Ingredients: 1 cup evaporated m lk, 3 cups sliced and peeled gr nny smith apples, ¾ cup all-purpose fl ur, ¾ cup whole-wheat flour, 1 l rge egg, ½ tsp salt, ¼ cup pl s 1/6 cup sugar, ¼ cup pl s 1/6 cup Splenda, 1 tsp gr und cinnamon, and ½ cup cold nsalted butter. 1) Pre-heat oven to 375 d grees. 2) In a bowl sir the fl urs and salt, then cut in the b tter until coarse crumbs show. Press on the b ttom and up the sides of a n ne inch pie pan. Arrange apples ver the crust. In another bowl st r 1/6 cup sugar, 1/6 cup Spl nda, and the cinnamon. Sprinkle over the pples. Bake in the oven for bout 20 minutes. 3) Meanwhile, in a b wl whisk the evaporated milk, egg, ¼ cup s gar, and ¼ cup Splenda until sm oth. Then pour over the apples. B ke for 30 minutes.
