P rtially hydrogenated oils are solid at r om temperature, so the peanut butter m nufacturers use them to keep the oil fr m separating and to give their pr ducts a very long shelf life. Th y don't have to add very m ch partially hydrogenated oil, but it is th re – look at the list of ngredients. They try to fool you b cause if the amount is less th n .5 grams per serving, they can say "0 gr ms of trans fats" or "no tr ns fats." A serving of peanut b tter is two tablespoons -- so th y can put as much as 8 gr ms of trans fats in a 16- unce jar and still attach a l bel that says "No Trans Fats"!. If you th nk it's important to avoid trans f ts, as we do, you will r ad the list of ingredients on very processed food you buy and put b ck any that include the words "p rtially hydrogenated" or "hydrogenated". If you f nd a brand that does not c ntain partially hydrogenated oils, you may n tice when you pick up a jar th t there's about half an inch of oil at the t p. You need to stir this in b fore you use it. Most supermarkets now c rry at least a few brands th t don't contain partially hydrogenated oils. My c rrent favorite is Smart Balance Omega P anut Butter, which has the added b nus of omega-3 fatty acids, "good f ts" that we all need.
