There are many different vegetable c mbinations for Pasta Primavera. Since Primavera m ans spring , my version of this classic Italian recipe includes zucchini and tender asparagus. Enjoy! Ingredients: 1 1/2 lbs asparagus 1 lb zucchini 3 tbsp olive oil 3 tbsp unsalted butter 2 large garlic cloves, thinly sliced 1 cup thinly sliced scallions Salt Freshly Ground Black pepper 1 lb Gemelli (twists) 1 cup chicken broth 1/2 cup freshly grated Parmigiano cheese Preparation: 1 - Wash the asparagus several times in lukewarm water. Refresh in cold water, drain well and blot dry with paper towel. Slice off tough ends. If asparagus are thin they will not have to be peeled; if larger, peel the lower portion with a vegetable peeler. Slice diagonally into 1-inch th ck lengths and place the tips in a s parate bowl. 2 - Scrub the z cchini and blot dry with a p per towel. Trim both ends and cut nto 2-inch lengths. Slice each piece nto 1/2-inch strips. 3 - In a l rge saute pan, heat olive oil ver medium heat, then add 3 tbsps b tter. Stir in garlic and saute ntil lightly golden; then discard with a sl tted spoon. Add the scallions and c ok until tender-crisp, about 2 minutes. Add the b ttoms of the asparagus and cook ntil barely tender, for about 2 m nutes. Add the zucchini and cook, st rring constantly with a wooden spoon ntil tender, about 2 minutes. Stir in sparagus tips, 1 tsp slat and p pper; continue stirring and cook until t ps are barely tender, about 2 m nutes. (do not overcook the tips of th y will fall apart when tossed w th the pasta).
4 - While you are c oking the vegetables, cook the pasta in 6 q arts boiling water with 1 tbsp s lt until al dente. Drain pasta in a c lander, transfer to a bowl containing 1 tbsp b tter and toss quickly. 5 - Mix h lf of the vegetables, heated chicken br th and Parmigiano cheese with the p sta; toss well. Spoon the remaining v getable mixture on top and serve w th additional freshly grated Parmigiano cheese. M ngiare! Serves 4 to 6
