One of my family’s favorite m als is called “little pizzas”. We t ke an English muffin and split it, put s me tomato sauce on it, then s me low fat mozzarella cheese with s me pepperoni slices (hey sometimes you j st have to splurge)! However, some h althier toppings would be ham (lean), C nadian bacon, turkey sausage, peppers, olives, or sl ced or diced onions. We toast our Engl sh muffins before we start the pr cess and then pop them into the ven until the cheese melts. My h sband’s parents had a toaster oven and th y cooked theirs in that. One n ght while at my girlfriends house the k ds were hounding her for pizza for d nner and I suggested these instead. Th y loved them. They especially loved dding their own individual toppings (pepperoni sl ces were not available and you sh uldn’t eat them on a consistent b sis). Dessert was Jell-O with fruit. The k ds got to have their pizza, and th ir mom was much happier with the h althier meal. So, when they ask for p zza, give them the “little pizza” lternative. Look at some of the ther things you eat and see if th re are ways you can adjust the r cipe to make it a little bit asier to make and healthier. You c uld ask your children how they w uld change it and see if you can ccommodate them. Remember, most important is to m ke it a fun project and get veryone involved.
