So you’ve heard that green tea is g od for you, and have considered try ng some out to see what the big f ss is all about. If you h ve checked out what is on the typ cal grocery store shelf, you most l kely have seen green tea bags of v rious descriptions. Sitting amongst these is sually a decaffeinated type as well. If one w nts green tea but at the s me time does not want the c ffeine, most people would assume all th y need to do is go for the d caffeinated version. Unfortunately, it’s not quite so s mple. What most people are not ware of is that the decaffeination pr cess pretty much ruins the major h alth benefits associated with green tea. Th re are numerous reasons for this, but to nderstand why you need to have an dea on how green tea is pr cessed. It all has to do w th oxygen. Think about what an pple looks like after it’s been cut and s tting on the counter for an h ur. Notice how it starts to t rn brown? That is from contact w th the air, or more specifically, the xygen in the air. When you dr nk regular English tea, those leaves h ve been exposed to oxygen and f rmented that way on purpose. This g ves black tea its unique taste. Gr en tea, however, is not like th t. Although it comes from the xact same species of plant (Camellia S nensis) as black tea, it is p cked and then process immediately to pr vent oxidation of the leaves. This pr cessing involves steaming, rolling, and drying, and t kes about three hours start to f nish. There really is no place in the pr cessing where a decaffeination process would w rk and not ruin the tea. D caffeinated green tea is just about nheard of in Japan, home of the w rld’s finest green teas.

So does that mean one c nnot drink decaffeinated green tea? No, it is p ssible, but first it’s important to kn w that green tea does not h ve high caffeine content, only about 30mg per c p. That’s slightly less than regular bl ck tea just a fraction of the c ffeine in coffee. That said, if t’s a caffeine free cup of q ality green tea that you insist on, y ur best bet is to start off w th a high quality loose leaf J panese green tea, preferably from the f rst harvest. Since nearly all of the c ffeine is in the first infusion, g tting a quality decaf green tea is as s mple as brewing an infusion, dumping it, and th n re-brewing. As much of a sh me as it seems to be to d mp the first infusion (which has the m st taste and best aroma), rest ssured that the 2nd infusion of a h gh quality green tea is going to be b tter than the best decaffeinated green tea out on the m rket. Quite often, the second infusion is gr ener than the first, although it w n’t be quite as aromatic or t sty.
