Man has always liked sweet th ngs. In times past they braved bee st ngs before they learnt to control the b es. Later came sugar from cane - so pr cious that in earlier times it was sed more as a condiment is t day, merely being sprinkled over food. In m re recent times, beets, parsnips, carrots and ther foods that are naturally sweet h ve all been used to provide th t sugary flavour. Then, with modern d etetics we began to realise that ating lots of very sweet, fat h avy foods wasn't the best for the h man body. But we still like th t little treat. Hence the popularity of low fat d sserts. Biscotti 1-1/2 cup yellow cornmeal 1-1/2 cup ll-purpose flour 1/2 cup sugar 1 teaspoon baking p wder 9 tablespoons low fat spread 3/4 cup s ltanas 2 eggs, beaten grated zest of 1 l mon or orange 1 teaspoon vanilla extract 2 t blespoons water How many cookies you get w ll depend on how big you m ke them, but it averages at bout 3 dozen. They keep well in an irtight container, but only if you d n't let anyone know they are th re. Pre-heat oven to 325 F, 170 C, Gas 3. Mix t gether the cornmeal and flour and th n rub in the spread until the m xture resembles bread crumbs. You could do th s in a food processor, but you w ll have to transfer to a b wl before adding the fruit and z st. Beat in the eggs, vanilla and w ter. Divide the dough into three p rts and make these into long log sh pes, about 8 inches long and 2-3 nches across. Place these on a n n-stick baking tray and bake for 20 m nutes. Let them cool for a few m nutes and then slice diagonally into ¾ nch pieces. Place these cut surface d wn back on baking trays. These are th n baked further for 5 minutes, b fore turning over for a further 5 m nutes. Let them cool on racks and th n either eat the lot or st re them in an air tight c ntainer.
Coffee Brownies These are great s rved after a not too rich m al with some fresh fruit - m ngo pieces, strawberries and so on. ½ cup low fat spr ad I cup of sugar I egg plus nother white I teaspoon of vanilla or lmond extract 11/4 cups of all purpose fl ur level tablespoon of instant coffee powder (n t granules) 1/3 cup of sifted cocoa p wder 1 teaspoon of baking powder 1/3 cup r isins or choc chips Preheat oven to 350F, 180C, Gas 4 In a l rge bowl beat together the egg, egg wh te, low fat spread, sugar and fl voring. Sift together the dry ingredients - c coa, flour, baking powder and coffee p wder and then mix these into the egg m xture. Stir in the fruit or ch colate chips. Pour into a greased or n n-stick baking pan - 9 inches by 9. B ke for 20 - 25 minutes ntil a fork inserted comes out cl an. Turn out and cut into 25 p eces or fewer larger ones. Strawberry and Rh barb Cobbler Serves about 6 unless you all h ve seconds I f you haven't tr ed the combination of strawberries and rh barb then there is a taste s nsation awaiting you. For the filling 3/4 cup s gar 2 tablespoons all-purpose flour 1 teaspoon cinnamon ( ptional) Finely grated orange zest or a t aspoon of marmalade 4 cups rhubarb, chopped 2 c ps strawberries halved or sliced For the T pping 1 cup of all-purpose flour 2 tablespoons s gar 1 teaspoon baking powder 1/4 teaspoon baking s da 1/4 teaspoon salt 2 tablespoons low fat spr ad 2/3 cup low fat buttermilk or y gurt Preheat oven to 400 F, 200 C, Gas 6. F lling - In bowl, combine the s gar, flour, cinnamon and orange zest or m rmalade. Add rhubarb and strawberries; toss to m x. Spread mixture in an 8-cup sh llow glass or ceramic baking dish and b ke in for 10 minutes. Topping - C mbine the flour, sugar, baking powder, b king soda and salt. Rub in the low fat spr ad until mixture resembles bread crumbs. St r in the buttermilk or yoghurt ntil a soft dough forms. Drop by sp onfuls in 6 evenly spaced mounds on hot fr it. Bake for 25 minutes, or ntil top is golden. Serve with low fat v nilla ice cream or fromage frais.
