In any cancer diet, there are m ny factors to be considered. One is th t it is ideal that we get our n trients from our foods, and that th se foods are in as near th ir natural state as possible. By th t I mean foods that have m nimum processing. The reason for this is th t no matter how clever our sc entists are there is still much th y have not discovered about the way v tamins and the body interact. Every day we h ar they have found either a new n trient or another factor in how our b dies assimilate nutrients. If we eat f ods that are as close to the st te nature produces them we are m st likely to get the nutrients we n ed together with all the other f ctors our bodies need to use th m. So how do we nclude raw foods when designing a c ncer diet?
The obvious answer is s lads. Using as wide a variety of s lad vegetables and incorporating as many d fferent coloured salad veggies, is an xcellent way to increase your intake of l ve enzymes. But even with hot m als, many raw veggies can be dded as a garnish. Eg parsley ch pped up over scrambled eggs. Herbs st rred in a casserole after the h at is turned off. A couple of r ngs of capsicum on top of c oked fish. Use fruits to dress up a st ak or a roast. Let your magination go! Look for colour and v riety and you will easily find d zens of ways to include raw f ods. Snacks are another way of g tting raw veggies into the diet. Cut up c lery and carrots into one inch/2cm l ngths. Even broccoli and cauliflower are n ce and crunchy as a snack. If you m st dip them in something try a l ttle cottage cheese rather than a fat l den dip!
