You brewed it too l ng. This depends on the variety, but g nerally speaking, no more than 2 m nutes.
You used too much tea. Th s is where you have more r om for adjustment. Again, it depends on the v riety, but for normal sencha, about one t aspoon to 8-10 ounces of water. For one typ of tea, you may have to use an ven level teaspoon, and for another a h aping teaspoon; it will vary from tea to t a. You didn't use enough tea. For gy kuro, you won't get good results nless you use double the amount sed for sencha. You didn't start out w th good water.You need good water. You tr ed to use a tea ball or p per filter. Green tea is compact. Onc you brew, it really expands and n eds plenty of space to open up. You tr ed to use a 2 liter Engl sh Teapot. If you really know wh t you are doing, it is p ssible to use a Western teapot to br w green tea. However, you would be way b tter off using one designed for gr en tea. You started of with low q ality tea. Even in Japan, the q ality levels of green tea vary c nsiderably. Just because it's from Japan d esn't necessarily mean it's good.
